Yes, you read that correctly.
I was surfing my Pinterest boards and came across this pin for Cadbury mini egg dip using yogurt and fat free coolwhip. I was intrigued, so I headed over to And They Cooked Happily Ever After to further investigate. The photos got my mouth watering and my wheels turning.
I mean c’mon! If you are a mini egg fanatic like me (you know who you are), then this picture alone is enough to send you on a mini egg bender. I want to get up from my desk chair and drive to the store and ingest 10 bags, like, now. They only come around this time of year, so I have got to get my fill.
Like I mentioned above, that particular recipe involved yogurt and fat-free cool whip. I’m not saying that’s bad. I’m saying if I’m going for it, I’m going all the way (that’s what she said). I’m not making this low fat or having much nutritional value other than this being the ultimate PMS antidote. So in my most hormonal state, I bought 2 bags of mini eggs and sat down with a pen and paper, inhaled a bag then began creating a cookie dough dip base recipe. I whipped some naughty ingredients together until it tasted right to me then I smashed my other bag with a meat tenderizer and threw them all in. I tested the dip using Teddy Grahams (too sweet), then again with plain graham crackers to dunk with, still too sweet. I reached for a box of buttery Ritz crackers and found NIRVANA.
1 (8 oz) package of softened cream cheese
1 stick of softened butter
1 cup powdered sugar
2.5 tablespoons of brown sugar
1.5 tablespoons of vanilla
1 (10 oz) bag of Cadbury mini eggs crushed
Ritz crackers for dipping
Mix them all up and devour!
