Every family has traditions. Ours is no different. Every Easter (and sometimes anniversaries or big birthdays) we go to this one Italian restaurant. My grandfather knows the owner, we order a zillion things on the menu, and the food is always amazing.
I almost always pass on the bread basket. Not because I’m a carb-a-phobe (I’m actually the total opposite), but because I’ll eat too much bread. Before I discovered my weakness, I’ve been known to wrap almost an entire dinner because I filled up on bread. I pass it up at just about every restaurant except this one. This is because this joint doesn’t just serve bread. They serve pepperoni and cheese bites. In my pregnant condition, I have many cravings. This roll is a repeat offender on my “I NEED TO EAT THIS IMMEDIATELY” list. It’s worth the splurge every time. It’s worth the 3rd trimester heartburn.
In an attempt to avoid showing my face around that restaurant on a daily basis, I’ve been busy with an easy copycat recipe.
Press out air bubbles from dough on a lightly floured surface.
Slice each string cheese into bite size pieces (about 4 pieces per stick). Cut pepperoni if it isn’t sliced already. Out Italian fam is a little snooty when it comes to dried cured meats, so pre-sliced ain’t happening round here. I’ve made it with both pre-sliced and hand cut sticks and they were both delicious.
Cut dough into triangles (about 2″x4″). Place one piece of pepperoni and one piece of cheese on the wide end of the dough triangle.
Roll it up. These would actually be really fun to make with the kiddos, now that I think of it.
Seal the dough closed by pinching it.
Repeat until all of your ingredients are used up. Place dough bites on a baking sheet that has been drizzled in olive oil, then drizzle a little on the bites. You can add grated cheese on top if you’d like.
Bake for 15 minutes or until golden brown. Serve warm.

You’ll need:

These are an easy crowd pleaser. You can use broccoli or another veggie instead of pepperoni and it would probably taste awesome!
